Brauerei Locher in Appenzell makes a significant contribution towards reducing food waste. Under the newly launched food upcycling brand brewbee, Brauerei Locher turns brewing by-products into tasty snacks. The idea was initiated by the brewery’s owner, Karl Locher. Together with his team, he is making great strides towards realising his vision of processing all of the brewery's by-products into high-quality food and nutritional supplements.

Brauerei Locher’s product developers make sure that only top quality ingredients are added, and give preference to short delivery routes in the interest of sustainability. Most of the ingredients are sourced from the region. Currently, the brewbee brand includes pizzas, crisps, plant-based products, mueslis, cornflakes and Birrattone. These products have been available from the brewery's online shop as well as available in stores since their launch. There are more products in the pipeline and distribution via the retail trade is imminent.
CLIMATE MISSION – INITIATIVE FOR MORE RECYCLING
For Karl Locher, reusing the brewery's by-products is only a first step towards sustainability. With his Climate Mission project, he wants to motivate food producers and consumers to recycle residual materials and food. The goal is clear: more resource conservation and significantly less food waste.
